Spicy tomato burger relish

You'll never look back once you've made your own burger relish! My favourite is full of flavour with a bit of a kick.


Stuff you’ll need

Get Stuck In

1. Finely chop the tomatoes, celery, shallots, gherkins, onions and chilli. Cook them in a pan for 20 minutes along with the mustard seeds, fennel seeds, sugar and smoking liquid.

2. Add the vinegar, turn the heat up high, add the ketchup and reduce down until you have a sticky relish. Season to taste.

15 plum tomatoes
4 celery sticks
6 shallots
4 garlic cloves
12 gherkins
3 white onions
2 red onions
30g mustard seeds
30g fennel seeds
150ml sherry vinegar
350g Demerara sugar
500ml tomato ketchup
2 red chillis
5ml smoking liquid
Salt and pepper to season
