Molten manchego nachos

There's surely no better sharing starter than nachos, loaded with guacamole, sour cream and molten manchego cheese.

1. For the guacamole, mash all of the avocados. Chop 2 red onions, 1 garlic clove and the red chilli (seeds off) really finely. Mix all the ingredients together in a bowl using a masher, until well combined. Add lemon, lime juice, oil and a bit of coriander.

2. For the salsa, chop the tomatoes, rest of the red onions, all the peppers really finely. Add oil, vinegar and coriander. Season to taste. 

3. Place the tortilla chips in a bowl, sprinkle the cheese on and put it in the oven for 3 minutes.

4. Take it out and add the guacamole, salsa, sour cream and jalapeños.

500g tortilla chips
4 plum tomatoes
3 peppers
4 red onions
1 garlic clove
350ml vegetable oil
100ml white vinegar
6 avocados
1 red chilli
100ml lemon juice
50ml lime juice
50g fresh coriander
200g manchego cheese
30 jalapeños
