Stuff you’ll need
250g salt-baked beetroot
50ml manuka honey
50ml red wine vinegar
Salt and pepper

1. Put all the ingredients into a liquidiser and blend until smooth.
2. Season with salt and pepper.
3. If it is too thick add a little veg stock.
4. Push through a fine sieve for extra smoothness.
